Oyster Mushrooms are one of my favorite edible mushrooms around, and boy, are they around! Fruiting just about every month of the year, and often in very large flushes – there are plenty of Oyster’s for all. So you found some oysters? Here’s a quick and easy oyster mushroom recipe that is just delicious!

Step 1: Clean off your mushrooms under cold water being as gentle as possible not to break them.
Step 2: After the mushrooms have dried a bit, toss them in a large bowl with olive oil, oregano, salt, pepper, and a little bit of lemon juice.
Step 3: Lay out the Oyster’s on a baking sheet and stick them in the oven at 300 degrees for about 15 minutes. Just until they are browned.
Step 4: Enjoy!
